An innovative project combines the bakery craft with modern marketing strategies. The “Handwerk meets Kaufleute” project was launched in Bayreuth, in which young bakers and confectioners as well as commercial trainees from the Gedikom company take part. The main focus is on creative learning formats and teamwork. Increasing training allowances in the bakery trade

In parallel to these creative initiatives, training in the bakery trade is being made more attractive. In Germany, the NGG union, together with the Central Association of the German Bakers' Trade, pushed through an increase in training allowances. The approval for the general validity of these collective agreements, which applies retroactively to March 1, 2021, has already been published in the Federal Gazette NGG reported.

The increase takes place in two steps. As of March 1, 2021, the training allowance was 645 euros in the first year, 720 euros in the second year and 850 euros in the third year. From February 1, 2022, the remuneration was increased to 680 euros, 755 euros and 885 euros. In addition, surcharges for overtime and for work on Sundays and public holidays have been decided.

New collective agreement from 2025

Further increases are already pending for future trainees in the bakery trade. A new collective agreement, which comes into force on March 1, 2025, provides for significantly higher salaries for the first three years of training. These increases are intended to make the baking trade even more attractive for young talent.

Interestingly, trainees have the choice of converting their remuneration to the cost of the monthly public transport ticket, which eliminates the previous travel allowance.

These developments show that the industry is not only looking for creative approaches to marketing its products, but also attaches great importance to the attractiveness of its training positions. Innovative projects such as “Handwerk meets Kaufleute” and significant compensation adjustments could therefore contribute to strengthening the bakery trade in the future.
